Latkes!
So here are two recipes we use in my family for potato latkes, and they're both delicious!
I can't wait to have them on Saturday!! Potato Latkes 6 potatoes 2 eggs 1/2 cup flour (or you can add 1/2 box of latke mix) 1 tsp salt 1 onion grated 1/2 tsp baking powder Grate potatoes and onion. Beat eggs. Add eggs to potato and onion, mix. Add dry ingredients, mix. Fry in hot oil until golden brown. Enjoy with applesauce (my favorite) or sour cream! Curried Sweet Potato Latkes 1 pound sweet potatoes, peeled and grated 1/2 cup flour 2 tsp sugar 1 tsp brown sugar 1 tsp baking powder 1/2 tsp cayenne pepper 2 tsp curry powder 1 tsp cumin 2 eggs 1/2 cup milk Mix flour, sugar, brown sugar, baking powder, cayenne, curry, cumin, and salt and pepper to taste. Add eggs to the spice mixture, and just enough milk to make a stiff batter. Add potatoes. Fry in hot oil until golden brown! |

Wow, I've never thought of having them curried before!
Trader Joe's sells some decent frozen ones, FYI. Thanks for sharing! I haven't made them completely by hand since I was little.

Does it matter what kind of potatoes? Red, brown, white, gold, baking.....?
