A 16lb turkey should have thawed by now if it was in the fridge for 2 days. You should be fine.

For a 15lb turkey it takes 3 days 18hrs.
I don't have enough time either [mines been in for 1 1/2 days and is still frozen], so mine is sitting in a sink of cold water. For a 15lb turkey in just cold water [not being in the fridge] takes 8 hrs to defrost. Plus you have to leave it out a few hours on the counter to get to room temp. ![]() 16lbs takes 4 days in a fridge to defrost. Or 8 hours in cold water. & change the water frequently. The turkey can rest at room temperature up to 1 hour. Bringing the turkey closer to room temperature helps it cook evenly.
