Because I'm lacking some of the ingredients from the other recipe I posted, and I already did my grocery shopping today and don't want to go back

This recipe calls for pan-frying them for a bit first, but I might skip that and just go straight to baking them so they're a little healthier
Update - the coconut chicken fingers were delicious!!! Panfrying beforehand will make the outside crispier vs. just baking alone. If you don't want to do that, I suggest toasting the coconut first prior to breading the chicken
Either that or I will eat them over the next couple of days...I make a lot less food because it's only me.
