DH only wants fries with them. But you could...make chicken parmesan with them or have mashed potatoes and gravy with them

I was thinking mash potatoe! or my homemade fries but I wasn't sure if that would be too many carbs for 1 meal..

ETA:though I suppose, the only other carb would really be breadcrumbs

Last night I made chicken strips with glazed peas & carrots, crescent rolls, and mashed potatoes.
Mac&Cheese would be good, too.
