HELP - Stuffed Peppers - Recipes

I'm stumped! I am making stuffed peppers for dinner tonight and can't think of what else I can stuff them with. I can't eat beans... so right now I've got ground turkey, corn, and cheese. They seem so plain! What else can I stick in them?

Rice is a good idea! I can't have tomatoes and I have onion powder, so I'll use that too.

Do I cook the rice first?

Yep! Then just mix everything up together!

I might have to make stuffed peppers this weekend...

My mom usually stuffed them with rice, meat and chopped tomatoes.

Mmmmm... I brushed them with olive oil and stuffed them with ground turkey (seasoned REALLY well), cooked rice with butter, and corn. I mixed all the stuffers together and threw an egg in there to bind them and then I threw a little shredded cheese in the mix and stuffed the peppers. Then I topped them with a little more shredded cheese. They smell YUMMY!

I always use ground meat and rice cooked in tomato sauce.

Ive never had couscous before... hmmm. maybe next time I'll try it?
