need help with a seafood party
I need ideas to feed about 100 people.
It's seafood themed and I just need some easy things that don't take long... any ideas? |

4 cod filets (5 ounces each) 1/3 cup reduced-sodium chicken broth (or white wine) 1/2 teaspoon Old Bay 1 medium onion, finely chopped 1 cup chopped bell peppers, combination red/yellow/orange/green if possible 1 small tomato, choppped 3 tablespoons lemon juice 1 teaspoon olive oil 1/4 teaspoon garlic powder 1/4 cup shredded Parmesan cheese (no grated) 1. Place filets in a 13x9 baking dish coated with non-stick spray. Drizzle with broth or wine; sprinkle with Old Bay. Combine the onion, peppers, tomato, lemon juice, oil and garlic; spoon over filets. 2. Cover with foil and bake at 425 for 15 minutes. Uncover; sprinkle with shredded Parmesan, bake 5 minutes longer or until vegetables are tender and fish flakes easily with a fork.

OOOO, I also do a shrimp dip.
1 large package cream cheese, softened (reduced fat is probably better for you but who really cares) 1 can shrimp, drained (get the least expensive; it's going to get mashed up anyhow) 2-3 tablespoons mayonnaise 1 teaspoon Worcestershire sauce tabasco to taste, usually about 1/2 teaspoon, bu remember it will intensify if you chill the dip Bugles Mix up the cream cheese, shrimp, mayo, Worcestershire and tabasco using an electric mixer. Scoop it all into a pretty bowl (because it kind of looks like barf) and serve with Bugles.

I get cod filets from the grocery store. Each filet is about 3 inches wide and anywhere from 6-8 inches long. That's one serving, but if you're planning to do a lot of things, you could cut each one in half and have more servings.
Do you want a recipe for crab-stuffed mushrooms? Shrimp scampi is also good, as is marinated shrimp tossed on a George Foreman grill (plus they're both easy). If you set the dip out as an appetizer it will be enough for up o 10 people to get a taste. My husband can go through an entire bowl spread out over the day, but he's not really goping to each much else. Think of it as any other dip; how many people can you feed on a bowl of french onion dip?

I'm only correcting your spelling so the OP can look up recipes, but it's "cerviche".

Add onions, garlic, seafood seasoning (yes, 1/2 cup is the correct amount) and salt to taste. Squeeze lemon juice into the stock, then toss lemon halves into the pan or pot. Bring to a boil over medium-high heat. Add potatoes and kielbasa; return to a boil. Cover pan with foil or partially cover pot with lid. Reduce heat and simmer, cooking until potatoes are just tender, 20 minutes. Add corn; increase heat to medium-high and cook, covered, until tender, about 5 minutes longer. Stir shrimp into hot broth; let stand, covered, until they are just cooked, about 2 minutes longer. Serve seafood, sausage and veggies on one or two large platters, with lemon wedges and small bowls of melted butter for dipping. Serves 8 Per serving: 429 calories, 43g carbohydrates, 37g protein, 12g fat (4g saturated), 218mg cholesterol, 5g fiber, 2,163mg sodium
