"Faux" Chikn' Dinner w/ cranberry orange relish - Recipes

So here is one more

, like I said I started getting into a habit of taking pics of dinners when I make 'new' things

. Since I'm vegetarian I get people asking me a lot 'what do you eat?'

, so here is proof I don't just eat salad...I eat a little too much IMO

I LOVE cooking!

This is my 'faux' chicken breasts (Quorn is the brand) with cranberry orange relish from Trader Joes. This with homemade potato salad (potatoes and carrot shreds) and steamed broccoli with Parmesan cheese. On the side is an offbeat version of caprese salad, with mozzarella chunks, grape tomatoes, and cucumber mixed with balsamic vinaigrette and olive oil.

OH MY GOD I LOVE THE CRANBERRY ORANGE RELISH FROM TJ'S!! I could seriously eat it all day long. Haha.

Your dinner looks amazing. I've been thinking of becoming a vegetarian for health/weight management reasons (meat makes me physically ill.. but it tastes so good

) and this picture may have just pushed me over to the veggie side. Lol.

Yea, being a veggie head is not difficult IMO and I personally think actually launches you to be more creative with food

. And yea that relish is awesome, J PILES it on food when I buy it

That looks good. I eat veg quite often but I don't do the faux meats. What is the faux chicken made of?

Hey Renee, it looks GREAT..... seriously. I do have one question.... I saw that you had parmesan cheese in there and wondered if that's on the list of stuff that Veggie's eat or not? I always thought Veggie = no milk, cheese, eggs, etc. Just wasn't totally sure so I thought I would ask you what kinds of things you absolutely do not eat besides meat. I'd love to see more pics... I bet you could even start a little veggie blog and get a ton of traffic!

I just thought that was for vegans. I think vegetarians just don't eat meat.
