Yes, you can color it. I use the gel food coloring and kinda stretch it into the fondant, like when you stretch taffy. You might want to wear gloves or the coloring will get all over you.
If you don't mind doing a little bit of extra work, you could do what I do...I make marshmallow fondant and it tastes sooooo much better than regular fondant. Just get a bag of the small marshmallow, add about a tablespoon of water, put it in the microwave for 45 seconds, stir it up to make sure its all melted (put back in for 10 seconds at a time if its not all melted), add in a 2 pound bag of powdered sugar a little bit at a time, after a while you'll have to knead with your hands instead of a spoon....tada! Yummy marshmallow fondant

yes, you can change the color of it just using regular food coloring. you just gotta do a tiny bit at a time to make sure you get the right color. the thing too is 1...it's hard work and 2....it doesn't taste all that great. we used it for my daughters 4th birthdya cake and i swear everyone pealed the fondant off and just ate the cake and the buttercream icing underneath.

Thats what I do, I just stretch it in. If you're doing all one color you might be able to mix the color into the melted marshmallows before you add the powdered sugar...I've been meaning to experiment with that, haha. The color would probably end up lighter after you add the powdered sugar.

It makes 2 pounds, which is normally enough for me to cover and decorate a 2 layer cake. I forgot to mention to have some Crisco handy for when you start kneading with your hands, it can be kinda sticky at first so you'll wanna rub Crisco on your hands
