Good Dishes for a 'single' person?
Since DH has been gone for the last three months for BMT and now tech..and i have at least another four months on my own...i need some good ideas on some good dishes (mainly dinner) for a single person. I LOVE to cook, but since DH isnt here i always have way too much left overs...So i really need some help on this. I have been living off Tv Dinners, Sandwhiches and Cereal for three months. I cant do this much longer
PLEASE HELP!!

A piece of fish and veggies
Or just seperate some chicken breasts into single servings I've also heard of people making bigger meals; big pot of spaghetti sauce, lasagna, casseroles, etc and then cooling it down and freezing individual portions

When I was living away from dh, I would buy chicken breasts in bulk and freeze them. I would take them out and thaw one at a time then marinate in different types of marinade depending on my mood or what I was having with it and grill and eat as a breast, sandwich, or chopped and mixed into food. It was really hard for me to get motivated to cook a big meal for just me. I always made things that kept well so I could eat it the next day. Rice is always easy and good with chicken. Simple cooked vegetables in small servings or a baked potato. Also, although unhealthy, lipton noodles or suddenly salad (the caesar mixed with pesto is so good) keep well.

Roast a small chicken. You can get at least two meals out of the bird itself, then use the carcass to make a soup that you can put in bags (or containers) and freeze.
Get a small pork tenderloin. Cut it in half and make medallions out of one half, then chunk the other half into cubes, season them up and stir-fry them or skillet-brown them and put them in pitas or tortillas with a cool sauce 9like ranch or tzatziki). The scalloppini cuts of chicken, turkey or pork are very good dipped in beaten egg and coated in seasoned bread crumbs, then pan fried. One package will give you 5-6 slices; have a couple for one meal then use the rest for sandwiches. Purdue or Foster Farms or someone now puts chicken breasts in individual wrappers inside a larger bag. It's a little more expensive, but you can literally pull out one at a time. Most of them come seasoned already. Get the little Minute Rice pre-cooked rice packages; they come two to a carton and in great flavors. I also like the little steamer bags of rice. As a side dish they're designed to feed two, but I've made a meal for one person out of them.

Yeah i made stroganauff one night...and stupid me cooked it like i do when he was here....i ate it for like 4 days straight and still had left overs...I wasnt sure that rice would freeze very well

but i use either chicken, hamburger, or stew meat. two cans of cream of mushroom soup two table spoons sour cream and two cups rice. That obviously feeds both me and him and left overs for lunch the next day. but its SOOO good

I like putting a chicken breast in a foil packet and seasoning in, 350 for about 30 mins, it comes out so moist, it's great! I'll do like lemon juice, honey, soy sauce, bbq, s&p.. good stuff!

I buy the bags of samon that come indvually wrapped & i put bbq sauce on them & i steam veggies. I try and buy alot of frozen veggies, cuz if i buy fresh they will go bad.
Also I make salads and spruce them up. I fry up like 2 chicken cutlets and cut them up and put them on a salad and cucumbers and honey mustard. Also I steam up broccoli and snow peas and than i cut up chicken into cubes and throw all the chicken and veggies into the wok an add some hosin sauce. I had that for dinner tonite, i ate like a whole head of broccoli and a bag of snow peas, lol. Also i got a couple of free bags of potatoes (from the armed forces ymca, check it out they do food drives for military families). any ways, i usually take like two potatoes and make a small portion of mashed potatoes and put a piece of chicken in the oven & put like korean bbq sauce on it (sweet tasting) and steam veggies. Also out of those potatoes i made potatoe salad that i eat for lunch. Also if i dont feel like cooking I buy those frozen bags of dinner usually its veggies with a meat in some type of sauce, like cheese, garlic, herb, ect. those are really good for a quick lunch or dinner. also at the commy I bought the case of velveta and shells & its cool because all the shells & cheese come wrapped in small portions theres like 5 meals out of that box.

Unless I'm eating cereal, sandwiches or frozen meals I always feel like I spend more money by cooking for just myself. It just seems like all the individual ingredients end up costing more than it's worth. I'd buy in bulk, but I get bored with chicken all the time. The only thing I don't mind buying is frozen vegetables, frozen skillet/stir fry meals, and fruit that I can buy by the pound. Oh and potatoes, both regular and sweet potatoes
YUM!Anyone have any better ideas for me? Or is this as good as it's going to get for me if I want variety?? |
