I have a 16 month old son who has become very picky. He normally just eats whatever I put down in front of him, but lately he's been picking it up and THROWING (with great effort) everything piece by piece on the floor. If I attempt to pick it up while he's in his little tirade, he'll make it a point to aim for my head when throwing the food pieces on the floor. He doesn't like it when I cut anything up and wants to be given everything whole. I have to watch him very closely but he's doing great. He has ALL of his teeth so chewing isn't a problem, its just when he decides to put too much in his mouth that there's an issue. I'm starting to feel bad because the only foods I know for a fact that he will eat are slices of bologna, hot dogs, mac&cheese, and fish sticks. For breakfast he'll have pancakes or waffles. He doesn't like any kind of egg. He snacks on crackers when he seems hungry, and he loves his fruits and vegetables. I've never been one to cook, and when I do its normally something from a box like the home-bakes or crock pot meals. I want to start actually cooking things from scratch (basically) because I'm sick of feeling bad for giving him the same thing over and over and over. I have a terrible diet, and hardly ever eat (don't worry ladies, I'm not starving myself, I'm actually obese lmao) so I don't want him to learn my bad eating habits and have health issues in the future. All meal suggestions would be greatly appreciated. I need breakfast, lunch, and dinner ideas. Thank you!

Toddlers are picky and go thru stages where they like 1 thing for weeks or months then refuse to eat that same thin they liked etc. They wont starve themselves. My son lived on oatmeal and crackers for a few months because he refused anything else. I took him to the Dr who had him see a specialist to make sure he could chew fine. He could. It was a phase. And its normal.
Keep it simple. Oatmeal, cereal, eggs, pancakes and such for breakfast. Grilled cheese, fruit slices, veggie slices, sandwiches, mac n cheese, and such for lunch.Dinner can be anything. Every child is different and their tasteschange constantly. My son never ate the normal todderl diet. And even now at 4 my sons favorite is homemade pesto, shrimp and spinach tortellini for dinner. My daughters favorite is chicken fried steak, homemade mac n cheese and broccoli. For awhile my son wouldnt eat meat and now he loves it.
