Fresh Vegetables
When I get fresh veggies, is it better to cut them and clean them all when i get home or leave them the way they are until I'm ready to eat them (a few days later)?
I got a ton of veggies today that I dont want to spoil. You know, the whole new diet thing

I clean most of my veggies when I get home from the store. It saves me a little time during the week when I'm cooking - my days are pretty jam packed so preparing dinner is like a race against the clock.

I think it depends on how long it's going to be before you eat the veggies...if it's going to just be a few days I think it's good to prepare them when you get them...if it's going to be a little longer I'd wait.

Asparagus need to be stored upright in a glass/bowl with a couple of inches of water in the bottom, otherwise they'll get droopy and soggy. You can make a bunch last for a week like that.
Carrots last forever, just keep them in the bag they were in at the store and throw them in the vegetable crisper. Strawberries need to stay in the container from the store, and don't rinse them until you're ready to eat them. What kinds did you get?

I don't clean them until I'm ready to eat them. I think it would make it easier on me during the week if I did, but I'm usually just trying to get everything into the fridge or freezer when I get home from the commy (what with the 3 kids running around needing everything all the time, lol).

I got bananas, peaches, strawberries and oranges for my fruits. For my veggies I got bell peppers, onions, romaine lettuce, some other type of lettuce, green onions, cucumbers, carrots, and celery. Now that I typed that out, it doesn't sound like as much food as I had thought! |

Bell peppers, carrots, cukes and celery can hang in the vegetable crisper. If you don't think you're going to eat the bell pepper within the week, dice it up and put it in the freezer for cooking. Your lettuce should be okay as long as it's not touching the sides of the fridge (sometimes that makes them freeze). You can rinse the lettuces off before putting them in the fridge, just make sure you shake off as much water as possible.
