I am sick and tired of eating out!!!! Eversince DH left I've been eating out so much and its not fun. I'm used to making big meals so now that its just me and Vinnie (my 2 yr old) I can't seem to cook w/o wasting food. Soi f you have a recipe thats good for one can you please please share?

why not make a normal meal and have leftovers later in the week?

Buy the large bags of frozen chicken breasts and pull them out as you use them. Buy meats and separate the packages so you have 1 or 2 pork chops in each package in the freezer.

I do that and then add a side like potatoes, rice...

You can also portion them out and freeze them... that way you've got several meals ready to heat and eat.

Acually my family just went away and i was home alone and i did the same thing. I would cook a meal that wud feed like 6 people! talk about a waste, so i know what you mean. I ate the leftovers the next day but there was still ALOT left.
I agree with everyone else, buy stuff that is individual. Buy a small bag of potatoes, you can make a baked potatoe in the microwave (i do that all the time), or you can boil the potatoes and make a small portion of mashed potatoes. As for veggies, depending if you like them canned. I've seen small cans of corn you could probably get a meal or two out of. Also Costco has the bags of chicken, breaded or grilled (i think, i only had the breaded ones) they sell bags of shrimp (yum yum).

I got to agree...You can make a meal and then portion it out and freeze it. Just think you don't have to have that same meal the next night. I have done is when I was working full time make meals for the week for DH and I and freeze them so I had dinner in the oven when I got home and it makes it alot easier!
