SO I have a pot luck dinner next week whose theme is 'international'. So . . . What are your favorite international recipes that can be made for at least a semi large group??

Great side dish.
Buy Israeli Couscous and cook it in chicken broth for 8 minutes. Sautee onions and mushrooms with a bit of EVOO. Add the couscous and veggies together and meld the flavors. Cheap and can cook for a ton of people. |

12 months is basically 15 with a day off here and there.

I make a nacho dip that it basically just velveeta, hamburger, and taco seasoning (not very creative I suppose)
You could do spaghetti/lasagna Taco Salad Stir-Fry ::: My step mom has brought it to pot-lucks before, stir-fry in one crock pot, fried rice in another

this is really easy and soooo good... just get an already roasted chicken and pull the meat of the bones. then line a baking dish with small corn tortillas like you would a lasagna.. the layer the chicken, cheese (i like jack or mozzarella)and green enchilada sauce until the pan is full more cheese on top and a few green olive slices and VIOLA! less work then enchiladas and YUMMY
ps bake on 350 until top is bubbly and lightly brown

I haven't had curry in a million years so that sounds super appealing! Do you have any ideas for specific recipes? It isn't something I have ever made.

You can also bring along a pot of rice. If you eat it at home, I like to eat it with pineapple tidbits and mandarin oranges.

Fry up some onions and garlic in a little oil until they're getting brown. Add whatever veggies / protein you want -- for veg, I recommend bell peppers, bamboo shoots, potatoes diced up small, maybe even squash. Don't know about meat (I don't eat it) but chicken and tofu are very popular. Fry them a little until the veggies start to sweat and the protein gets browned. Then pour in the coconut milk, stir it up good. Add curry paste to taste (more or less depending on your spice preference). Mix in some lemon and lime juice, a little salt. You can even put in a big piece of lemongrass and cook it in the sauce if you're feeling fancy (don't eat it, though, it's coarse and yecchy!). Simmer like that until potatoes or veggies are tender and ready!
