DH invited his old friend and his son here for the weekend without telling me. I have to cook dinner for them on sunday night. He said they only eat chicken and fish. I'm a little intimidated to cook for him though. His wife know how to cook these amazing Japaneses meal and he can cook amazing Mexican meals. I ummm can cook but I want something that will wow them I guess. Any ideas? They kind of told me last minute and I had streak planned but they dont eat it. Any recipes you have would be great! Thanks everyone!

You said they like mexican, something that I make when I have a lot of people over is tacos.
You can do a pan of beef and a pan of chicken tacos, which are amazing! Just cook up chicken, shred it, then prepare it the same way you would beef as directed on the back of the flavor packets. You can make up like a dip to have before dinner...mix up velveeta with salsa makes a good meat free queso dip. That way people can take beef or chicken, add their own toppings. Make up a couple boxes of spanish rice to go on the side. Or there are even some good recipes online for like mexican cornbread. Another idea would be like some kind of chicken casserole. My mom used to make chicken rice casserole...just veggie rice, cream of chicken soup, cooked chicken, maybe an extra can of peas, pour it in a big casserole dish, top with crushed cracker crumbs.

I don't eat fish that much, so I won't be much help there.
Chicken ideas: butter chicken, chicken lasagna, chicken enchiladas, chicken lattice... I know that I've got more ideas, but I'm drawing a blank at the moment.

My DHs favorite is pineapple chicken, I just use frozen bone-in chicken, Lawry's Teriyaki-pineapple Marinade, Diced canned pineapple, and a about a 1/2 cup of brown sugar. I drain the pineapple and save the juice, then just layer everything in the crock pot turn it on low and let it cook for a good 5 hours or so, then just before its done, I use the juice from the crockpot and the pineapple juice to make gravy(just add a little flour and whisk it on the stove until it bubbles)....Its really easy, and I usually serve it with rice-a-roni Rice Pilaf, and those Hawaiin sweet rolls that come in an orange bag...We eat this exact meal almost once a week

This recipe is EASY!!!!! And always seems to WOW!
It's called cranberry chicken: 1 can whole cranberries 1 envelope lipton onion soup mix 4 boneless, skinless chicken breasts 1 bottle french dressing Add all ingrediants to crockpot, cook on low for 4-6 hours. Stir occasionally. Serve over rice.

bbq chicken every one loves bbq
or baked chicken i just throw baby carrots a few chopped potatoes and a chopped onion in a baking pan with pieaces of chicken thighs, legs, breast or what ever i have and season with salt pepper, garlic powder and parsely and cover with foil and bake for like an hour or two on 300 hope u figure something out .....good luck
