Mexican Shredded Chicken!?
Does anyone have a Tex-Mex style recipe for shredded chicken??? I am tired of going out to get chicken tacos, flautas, etc. when I could learn to make them from scratch here! Thanks in advance!

I just use chopped cooked chicken and heat it with about a half cup of salsa. It comes out pretty good. Sometimes I add more lime juice, cumin, or chii powder, but usually the salsa mixed in does just fine.

Dorito Chicken Casserole
I posted this recipe before, I guess you could call it Tex-Mex. Its a little spicy..and delicious!
-------------------------------------------------------------------------------- 3 whole chicken breasts boiled and shredded 1 can cream of mushroom soup 1 can cream of chicken soup 1 can of rotel shredded cheese 1 bag of Doritos (you will not need the whole bag) Mix together the 2 cans of soup and rotel tomstoes, add some shredded cheese, to your liking. Next- layer the sauce, chicken and Doritos a couple times and top with more cheese. Bake at 350 for about 45 mins. This recipe is so simple and yummy. It is easily doubled. |

3 -4 boneless skinless chicken breast you can rough chop if you like
1 large yellow onion diced 1 large green bell pepper cut to strips 2 tbs miced garlic 1 can diced or stewed tomatoes rotel works best salt and pepper to taste 1 tsp cumin powder 2-3 tbs evoo 1 cup no salt chicken stalk in a hot pot heat evoo add onion , bell pepper and miced garlic do not brown but sweat onions,peppers and garlic together next add in chicken pieces to start a slight brown then add one can rotel tomatoes and 1 cup of chicken stalk salt pepper and cumin to taste even a little red pepper flakes to make it a little more spicy turn down the heat and let simmer for up to an hour or until most of the liquid is gone you can even add a little bit of lime juice and cilantro to help balance out the heat hope this helps

I made chicken tacos the other night the same way you make regular tacos basically.
Cook up the chicken, then you use two forks to shred it. In a separate pan I sauteed some peppers and onions, then added in the chicken, and taco seasoning, just following the directions on the back of the seasoning packet. I made a pan of those and a pan of the ground beef ones for when my family came to visit...and they actually ate more of the chicken than the beef!

the absolute EASIEST way to do this is throw some skinles chicken (boneless works best) into a crock pot with packets of taco seasoning. add a tiny bit of water. let it cook till you can tear it apart with a fork. easy easy easy. cannot GET any easier lol
