Ideas for red peppers??
Hey ladies!! I happen to have an overabundance of red peppers and there are more on the vine
I was wondering if you have any good recipes that include red peppers? I also wondered if anybody knows the technique for roasting red peppers?? I was thinking if I could roast them and can them that would be EXCELLENT!!TIA!!

This is tasty... it's a red pepper tapenade... You can eat it with antipasto or it's good on crackers and such too!
http://www.foodnetwork.com/food/reci..._24131,00.html As far as roasting them, I usually just put them on the grill until they get really blackened on the outside, then let them cool and peel all the skin off, then cut and eat! Not sure how the jarring part would work. |

Here is the technique...
![]() Either way, the process starts the same. If you have a gas cooktop or other open flame, you can place the pepper right over the flame. Hold it with tongs or just rest it on the burner grate. If you cook with electricity, put it on a baking sheet under the broiler. Turn the pepper frequently. You want to blacken the skin all over, but you don’t want to char the flesh. Once it is black, put it in a paper bag and close it, or cover it with a kitchen towel for five minutes. Then rub off the blackened skin, and core, cut, and seed the pepper, if you like. At this point, you have peeled pepper, possibly a peeled, cored, cut, seeded pepper. But you do not have a roasted pepper. To roast the pepper, put the cut pieces in a baking dish with a little oil and pop it into a 400°F (205°C) oven, until tender and slightly browned, about 25 to 30 minutes. |

Heehee...we love them too
I've also got a ton of jalepenos, I've already processed 7 jars, mom and I did it while she was here...it was so fun!! Now I just need to get peppers done I don't see why I could can them once they were roasted, I just need to find a recipe that I CAN can.

Yeah I buy canned green chiles, and its a similar food. So I don't know why you couldn't can them! Although I whenever I buy them roasted, they come in jars, maybe there is a reason for that!
Might be worth looking into... But have fun! I love peppers, hot or mild, of any kind! :eat
