    I need- yes, NEED a great recipe for Éclairs. I'm good with the shells, I just need a fabulous filling and frosting.

    I'll trade my Crockpot Chicken Curry w/brown rice.

    How did the French Onion soup turn out for you?

    I'm doing much better. I'm so glad to be back and reading what my favorite comedians have to say about life, love and the Military (you are #1 on that list). Thanks for asking eelo. Sometimes I feel like I disappear and no one will notice. My lovely friends on sos have shown me this isn't true and it's quite nice to know that people here don't give up on you or forget.

    I know how to make the shells for eclairs, as I've made cream puffs before (eclairs are just long cream puff shells), but I don't know a damn thing about the filling or frosting. Real eclair frosting has a LOT of chocolate in it. I want to make miniatures for a party in May and I need to make a practice batch soon. They need to be thoroughly tested.

    Is it ganache? I've made that before for a cream roll cake. It was like a giant Hoho. GOD that cake was good.
    Well then I guess I just need the recipe for the delicious cream filling. I know some people put pudding inside, but that is just SO wrong.

    Yes, the top is a standard ganache.

    And nooooo to pudding! People are so freaking lazy nowadays! You use a regular vanilla pastry cream recipe, and then add melted bittersweet chocolate to it. Don't be tempted to use cocoa powder, because it can cause the cream to separate (tried it, wasn't pretty).

    I have a fabulous pastry cream recipe that I use in my cakes. It will take me a minute to find it and type it up. Do you want it?
