    Third, add sauce.
    Fourth, dish with rice and eat.
    totally making that chicken bruschetta tomorrow

    Our fave and easy dish is Salmon, Feta Couscous, & a veggie. I buy the frozen salmon at Sam's Club (individually wrapped) and defrost it in cold water for about 20 min. Then put lemon juice and seasoning on it, put it in a foil packet, and in the oven at 400 for 20 min. Comes out perfect! I make couscous with chicken stock (take 7 or 8 min total) and put some feta cheese in it when fluffing it. Any veggies works with it. So yummy!!!

    Fave appetizer is feta cheese, tomatoes, and cilantro chopped...mix together and eat with pita chips or crackers! The best!!!

    Chicken Enchiladas

    12 oz shredded cooked chicken (I buy a cooked rotisserie chicken from the deli, use half for this dish and half for chicken salad).
    16 oz sour cream
    1 package taco seasonings
    2 cups shredded cheddar cheese
    2 green onions, diced (I actually cut them up with kitchen shears)
    1 small can enchilada sauce
    8 flour tortillas

    Spray a 9x13 pan with Pam. Pour half can of sauce in pan and set aside

    Combine all ingredients. Lay out a tortilla, place approximately 1/3 cup mixture on edge of tortilla and roll up, folding in edges. Place seam side down in pan. Repeat for all tortillas.

    Pour remaining sauce over top. You can also add extra shredded cheese on top. Cover with foil, bake at 350 x 30 min.

    i'm making another chicken enchilada recipe tomorrow but i am gonna keep this one in mind to try as well!

    Stuffed Shells

    1 package of jumbo shells
    1-2 cup bag of mozarella cheese
    shredded parmesan (either fresh shredded by hand or you can buy it in a little tub)
    ricotta cheese
    diced garlic (to taste)
    italian seasoning (to taste)
    pasta sauce


    1. boil shells as it says on package
    2. mix together the ricotta, mozarella, a little bit of parmesan, garlic and italian seasoning
    3. stuff the shells with the above mixture.
    4. grease or PAM a lasagna pan and lay down a layer of pasta sauce.
    5. place shells in pan and spead another layer of pasta sauce liberally on top
    6. bake covered at bake at 350 for 45ish minutes.

    Slow cooker pulled pork

    1.5-2 lbs pork loin roast
    12 oz root beer
    1 bottle your choice bar-b-que sauce
    8 rolls. Split and lightly toasted
    *optional cole slaw

    Place meat in crockpot. Pour in root beer. Cover and cook for 6 hours. Drain well. Shred meat and add in sauce ( I warm it in a saucepan). Serve topped with slaw on toasted buns.
