Super easy way to turn leftover chicken into yummy new meal
So this is one super easy super quick way to turn leftover chicken into a new meal. All you need is sour cream, ranch dressing, salsa (mild or spicy or whatever salsa dip you like) and leftover chicken.
Cut the chicken up into cubes or strips, however you like. Then put the chicken on a frying pan or skillet on med-high. Add about one to two cups of salsa and mix it with the chicken. Now I like to serve this with tortilla chips, so I add 2 cups, but you can use less. Let the salsa and chicken heat up. When the salsa starts bubbling a little, add about a teaspoon of ranch dressing, and a tbs 1/2 of sour cream. Mix it really well (depending on how much salsa you use, it may look a little pink) and serve. It takes maybe ten minutes to make. So next time you make chicken, make a little extra and try this recipe the next day. |

oh i am roasting a chicken for tonight... we may have to do this tomorrow. altho i'm going to have to find some substitutions for the ranch & sour cream since DH doesn't like either.
