deadliest catch without the crabs.

I made this for dinner last night (not my recipe!) but it was tasty so I thought I would share.
![]() Make sure you have all your prep work done, it is a pain to peel shrimp in a hurry and cut veggies! Ingredients: 3 tsp Asian Sesame Oil (I used pure, not a blend) 1 1/2 lbs asparagus, trimmed and cut into 1 inch pieces 1 lb raw peeled and deveined shrimp 1 tbsp grated fresh ginger (if using powder, might want to cut down to 1/2 tbsp) 2 tbsp reduced sodium soy sauce (I ended up putting a bit more in after I was done cooking) 2 tbsp fresh lime juice (I used the juice of 1 key lime) 1/4 cup loosely packed fresh basil leaves, thinly sliced 1-2 cups of rice (the recipe said brown, I used white), depends how much you want 1. Cook rice according to directions on package 2. In a large nonstick skillet, heat 2 teaspoons (not all of it!) over medium heat for 1 minute. Add asparagus and cook 7-8 minutes or until asparagus is tender-crisp. Stir occasionally. Add shrimp and ginger, cook 5-6 minutes or until shrimp is orange in color and cooked thoroughly (don't overcook, shrimp gets icky then). Stir occasionally. 3. Stir in soy, lime, basil and the rest of the sesame oil. Remove from heat and serve over rice. 265 calories, 29 g protein, 22g carb, 7 g fat. It's also great as leftovers, I'm eating it right now. |

Sounds Yummy! DB won't eat it as he hates Asparagus but I am going to print it and make it a night he works or something. Actually, I am going to make it tomorrow.
