Oprah's Funky Spaghetti! *EASY*
Saw this recipe on Oprah yesterday. Just made lunch for my and my dd.
Made some easy chicken cacciatore and this spaghetti. YUMMY and EASY and the sauce does NOT get cooked!! 1 lb spaghetti 12-14 oz cherry tomatoes ( red & yellow) (I used a fresh vine ripened beefsteak or you could use roma) 2 handfuls of marjoram and basil, leaves picked and torn (I used dried marjoram but you MUST use fresh basil for the taste!) 3 tbsp olive oil 1 clove garlic (finely chopped) splash of red wine vinegar (I used balsemic) sea salt and freshly ground pepper, to taste. Cook pasta to al dente. While pasta is cooking, place tomatoes in a large bowl. Scrunch tomatoes with hands (watch for squirting seeds!), then add all ingredients. No need to drain or rinse spaghetti, just pull out of the water with tongs and add to bowl. Mix all together. This is a do-over for me!
