I like to put like a stone ground or dijon mustard on them, and then bread them and pan fry them. Mustard and pork go really well together.

Stuffed - slice almost in half (length wise), add stuffing and corn. Place in baking dish, add a bit of water to bottom, bake, covered in a 350 oven.
W/carmelized apples - fry both side of chops in 50/50 olive oil/butter til both sides are lightly brown and meat is cooked through. Set aside and keep warm. Add to fry pan with juices 2 sliced apples (I use granny smith), 2 tbsp balsemic vinegar, 1 tbsp suger. Fry until tender. Pour apples and sauce over top of pork chops.

I like to take half a pack of saltine crackers, crush them up finely... and add about 1/4 cup of parmesan cheese to that and some seasonings (garlic salt)... mix that all up... dip the pork chops (egg + a lil water)... then coat them in the cracker/cheese mix & either skillet them, bake them, or fry 'em
