Hey Ya'll. This is just about the most awesomiest recipe that you'll find for making Chili Con Carne. Its oh so easy and oh so yummy. Don't believe me, LOOK! Still don't? Try it out.

Okay, here is what you'll need

2.2 lbs of ground beef (I use weight watchers, its the best IMO)
10 Stalks of Celery
2 large white onions
1 head of garlic
1 green & 1 red bell pepper
3 large chilies (for heat- Optional)

1 can of beer
1 can Tomato Puree
1 can Tomato Soup
1 can whole stewed Tomatoes (diced & juices)
4 whole preserved Jalapeños (optional)
1 can Kidney beans
1 can Pinto beans
1/2 a jar of preserved vegetables in white wine vinegar (substitute with 1 cup White wine vinegar)
17 oz of Baking chocolate (substitute with 1 cup of cocoa powder)

1 tbs of Salt
2 tbs of ground white/ black pepper
2 tbs of sugar
2 tbs of paprika
2 tbs of Cayenne Pepper (optional for heat)
2 tbs of Mixed dried herbs
1 oz of ground cumin
Olive Oil for frying

Method



Dice the celery, Onions, Garlic & peppers up
Strain the beans from the can juices




Brown the beef- to do this, heat olive oil in a pan, and fry till meat browns. Set aside.


Now to cook the rest of the ingredients

Heat olive oil in a large pot, then add Garlic and onions, allow to sweat. Then add the celery and 1 can of beer and allow to simmer till soft on a high heat.

After 5 mins of simmering, add the peppers to that


Now add the Jalapeños


And the preserved vegetables or if not available then the white wine vinegar


To that, 1 can Tomato Puree, 1 can Tomato Soup and 1 can whole stewed Tomatoes


Then the Kidney & pinto beans


The browned beef and Chocolate or Cocoa powder
*Make sure your stir well*

Then add all the spices together and STIR VERY WELL or the bottom will burn.
Simmer for 20 mins under a low heat and continually stir.

And after 20 mins, Viola! *garnish with a mix of Mozzarella and Red Cheddar cheese*

I love questions hun!

lets see; this does make a ton (serves 10 fairly large eaters) so if you plan to cook for 5 then half the ingredient list, for 2 then quarter it (you get the idea)

It TOTALLY Freezable- its thrusday evening for me, I made this ahead of time for a party I'm having on Saturday
