Chicken breast meal ideas?
Anyone have any good ones that are fairly healthy to boot? I've done all the obvious things (with pasta, with veg, cutlets, parm, etc.) and I feel like I have scoured foodnetwork.com already, too!

I love this recipe! I'm actually making it tonight. I make it with boneless, skinless chicken breast even though that's not what it says. |

Preheat oven to 350
Mix about 2 c oatmeal with about 1/2c shredded or grated parmesan (toss some oregano or other spices in - I use parsley or italian seasoning sometimes) Crack and whisk an egg. coat chicken breast with egg and then oatmeal/cheese mixture. Put into lubricated baking dish. After all chicken breasts are in, drizzle lightly with olive oil and bake at 350 for 35-45 min (depends on your oven and how crispy you want it). |

I've been inventing marinades lately - just throw in whatever sounds good - it's actually fun. Then I'll either have DH grill it, or I'll cook it on the george foreman.

I marinate mine in soy sauce, terryaki sauce, and white wine vinegar with some basil and salt and pepper. It turns out really good!

Last night for dinner, I put three chicken breasts in the crockpot with a large can of mild enchilada sauce and a can of water. I cooked them for about 4 hours, then made chicken enchiladas with them.

I do that too. Sometimes instead of grilled chicken I will put in panko bread crumbs and bake it in the oven and poor the mushroom sauce over the chicken when it's done. It is so good.
