Arroz Con Pollo - Main Dishes

Does anyone have a tried and true authentic recipe?

An old friend of ours who lived in Great Lakes had his mother living with he and his family, and she was about a 75 year old mexican lady who made THE BEST food EVER. One dish she made for a g2g we had was Arroz Con Pollo, which was just like a super simple basic chicken and rice dish, and I've tried to duplicate it but can't! I know however she made it was def the super authentic way, and none of the recipes online can compare.

Any ladies on here that have a tried and true recipe?

I would love a good enchilada sauce and Spanish rice recipe.

I don't make any kind of 'pollo' any longer

, but I do have my own recipe for Arroz con Grandules. I used to make Arroz con Pollo for J back in the day, but I don't remember anymore how I cooked the chicken. It also varies from person to person, like J's mom makes it with chicken legs, I used to make it with sliced chicken breast.

I can guarantee and Ms. Shaky probably has one though

. I can give the Arroz con NO Pollo if anyone wants
