I posted a Cheddar Beef Enchilada recipe a couple of months ago. It makes enough for two batches. I freeze the other.
I think anything with the cubed hashbrowns would freeze well.

We did this a few weeks ago where me and my friends got together on Friday and made meals for all week. It was great! But we made London Broil, Tamale Pie, Shrimp Curry with Coconut Milk and Beef Stronganoff. It was SO great not having to worry all week about what to make for dinner. Let me know if you want any of the recipes, I'll try to remember for you!

I know most pasta dishes freeze very well. Try to think of the bagged dinner type things you see in the frozen section of the grocery store. Maybe chopped bell peppers, onions, sausage and cheese that they saute and then add eggs.
