Pork enchiladas
Alright...I got this recipe from Food Network but tweeked it a bit for my family. Here is my version.
1 c. Chicken Stock 1 c. sour cream 1 c. Salsa Verde (I couldn't find it here but used the Verde sauce in the can) Salt and Pepper Shredded Pork Flour Tortillas (can use corn) Shredded Cheese Bit of oil *****I made pork (butt) in the crock pot on Sunday for sandwiches and it worked really good in here. That was just the butt and some chicken broth in the crock pot for about 8 hours.**** You mix the stock, sour cream, and Verde in a bowl. You put some oil in a 9 x 13 cake pan and smear it around. Put some of the mixture in the bottom of the cake pan. About a cup. Put some of the pork in a tortilla and some of the sauce. Place seam side down. After you have filled them, pour the rest of the sauce over the enchiladas. Bake at 400 for 10 min with aluminum foil over them and 15 with out the aluminum cover. Sooooooo good and great with leftover meats.
