Black bean corn tortilla pie
2 c. or 1 can corn
14 1/2 oz can black beans, rinced 16 oz jar salsa (I like chunky style) 1/2 c. cilentro 2 c. shredded montery jack cheese 4 10" tortillas heat oven to 375. Mix corn, beans, salsa and cilentro in a bowl. On a cookie sheet layer totilla, bean mixture, cheese. repeat twice and top with last tortilla. Bake until cheese is melted and top tortilla is browned 25-30 minutes. Top with sour cream if desired I have been making this for years. Its so good and so easy. If you want more spice go for medium or hot salsa. It would also be good with cheese like pepper jack. |
