Basic Sri Lankan curry recipe
This is a basic recipe - I'm sorry it's not very specific, it's a very old family recipe.
meat (any kind) corresp. meat stock - 1 cube with dissolved in a little water large onion 4/5 cloves garlic tomatoes, chopped (1 tin or a couple fresh) tsp ginger tsp chilli 1/2 tsp salt 1sp dried cumin to 2sp coriander (to taste) tsp turmeric creamed coconut (or 1 tim coconut milk) Chop the onion and fry with the meat, without oil. Throw in all of the spices together and fry for a minute (the longer you fry, the hotter it will be). Add the chopped tomatoes with juice. Add dissolved stock and allow to simmer (You can add cubed potatos at this point if you wish) Add coconut to thicken. NB. for an Inidan style curry, add garam masala with the spices, and substitute coconut for yoghurt (you have to reduce the curry first though!) |
