    "Winter" food.

    Its about 37 degrees here in chilly Fairbanks, and I am cuddled up on the couch with an oversized blanket and Pinterest. Im beginning to feel the winter spirit. Baking, and decorating, and so on and so forth.

    Right now I am looking at and seriously contemplating making.......




    Hot chocolate. In the crock pot. I think yes. Except I don't have any marshmallows.

    But anyway. What are your favorite go-to dishes for winter?
    Soups? Casseroles? Is there a certain comfort food you make?

    Homemade chicken and dumplings, chili, beef stew, beans and cornbread, red beans, rice and sausage, Chicken pot pies, meat loaf are my always go to on a cold day. Im sure there are more but thats what i've got off the top of my head.

    We arent really bean people ( that sounded weird) but I like these other ideas! They all sound so delicious and I want to make them right now, but I cant. Its only 9:30. Probably not acceptable to be making them.

    Three votes for chicken and dumplings and I don't even know how to make them. Anyone got any good recipes? Also, taco soup sounds really delicious, got a recipe for that?

    Mmmmmm mexican food. Now I need tacos. What is your recipe for meatloaf? Last time I tried meatloaf I put it in the crock pot and screwed it up so bad...

    I think most of Alaska wants to be somewhere warmer right now. Ill send you some snow when it starts falling. In like two weeks.

    This is going to be a HUGE adjustment for me.

    Chicken N Dumplins (haven't had any of my mom's in over a year ; it was my brother's favrorite food and my mom hasn't been able to make it since the accident)
    Big crockpot of vegetable soup
    My mom's lasagna (I tried...nothing tastes like my mommy's )

    Do you have a crock pot? Seriously I have the easiest chicken and dumplings recipe ever, my friend has done it on low in a pot on the stove too and it came out just fine!

    But you need 2 cans cream of chicken soup, about 2-3 cups of chicken broth, 1 stick of butter, 1 cup of milk, 1.5 lbs of chicken tenders and 2 rolls of pre made biscuits (I usually buy pillsbury home style biscuits!)

    Put all your liquids ingredients and the stick of butter (sliced up) in the crock pot with the chicken tenders and let it cook on low for about 3-4 hours. Season to taste with salt and pepper and I use a little onion powder! Once the chicken is cooked, remove it from the liquid and shred it! Then put the chicken back in and let it cook for about an hour. About an hour before you're ready to serve, cut the biscuits into quarters and throw them in! They'll help thicken up the chicken and dumplings and it's yummy and easy
