    What meals do you guys have planned??

    I tend to plan mine per week or around paydays and so far I have:

    Italian stuffed mushrooms (pork sausage, cheese and marinara) with salad and maybe quinoa
    Pork roast rolled with spinach, muschrooms and onions with salad
    Stuffed bell peppers with cauliflower mash

    We've already eaten a couple of our meals, baked chicken, meatloaf, and tonight is tacos. I've got pork chops in the fridge, and some italian ground sausage I need to figure out what to do with.

    I have been wanting meatloaf for the longest time and DH says he doesn't like it. Like, how can you NOT like meatloaf??

    Lasagna (one 8x8 to eat, one to freeze), baked stuffed (with a spicy cheesy concoction) chicken breasts & fiesta rice, Ranch pork chops & cheesy quinoa, pepper jack cheese steak sandwiches, and burgers.

    LOL my DH doesn't like meatloaf either.

    Hmm I have to go shopping but I have a lot of meals planned for my shopping list:
    fried rice
    orange chicken
    cheesy shrimp quesadillas
    chipotle chicken burritos
    linguini and clams
    beef pad thai

    My DH isn't the biggest fan either. I've always wanted to make those meatloaf "cupcakes" with mashed potato "frosting". I guess I'll use our kids as an excuse to make those one day.

    How do you make orange chicken?? I tried making it with a recipe off Pinterest and it was sooo gross!

    Here's my recipe:

    For the chicken -
    1 pound chicken breast
    1 egg white
    1 tsp salt
    1 tsp sugar

    For the sauce -
    1/2 cup ketchup
    1/2 cup sugar
    2 Tbsp apple cider vinegar
    1 Tbsp soy sauce
    1 Tbsp + 1 tsp corn starch
    2 tsp sesame oil
    2 Tbsp vegetable oil
    1 Tbsp grated orange zest
    2 Tbsp chopped green onions

    Cut chicken into 1/2 inch cubes. Combine egg, salt, and sugar into bowl. Add chicken and mix well.

    Combine water, ketchup, sugar, vinegar, soy sauce, cornstarch, and oil. Stir and set aside. Place a pot over high heat; when hot add the vegetable oil, orange zest, and green onions. Cook for about 20 seconds, stirring, taking care not to burn the orange zest (this will make it bitter). Pour combined sauce ingredients into pot and cook over medium heat, stirring frequently, until sauce has thickened (12-15 min).

    Preheat 4 cups oil to 350 degrees. Put chicken into bag with 1 cup cornstarch. Shake well for 20 seconds, then shake off all excess. Deep fry until golden brown, about 2 1/2 minutes. Remove from oil with a slotted spoon and drain well on paper towels. Add to pot with orange sauce, stir for 30 seconds, then serve immediately.

    Tonight is Layered Mexican Casserole, with leftovers tomorrow (because today & tomorrow are 12 hr shifts for me), Saturdays is chicken fettucine, and Sunday is Benihana's for a friend's daughter's bday

    The rest of the month we have the following planned (with one delivery pizza night and 2 fend-for-yourself nights on the nights I work):

    Cheesy chicken enchiladas
    Baked ziti with sausage
    Buritto bowls
    Crockpot cream cheese chicken
    Pretzel chicken
    Cheesy chicken shells
    Fajia wontons
    Flautas
    Philly cheese steaks
    Cilantro lime chicken skewers
    Fish tacos
    Buffalo chicken burritos
    Pot stickers
    Stuffed & baked jalapenos
    Homemade pizza rolls
    Crockpot pulled pork
    Jalapeno stuffed chicken
    Cheeseburger casserole
    Egg rolls

    ETA: several of the meals make leftovers, so this is our meal plan for the whole month of June
