my only really good side-dish is my pilaf.
you probably already have like 100 rice recipes, but here is mine: 3 cups chicken broth (you can use one can and add water to make 3 cups if you need to but i just buy the cartons of swanson chicken broth and they work really well) 1 cup rice 1 cup angel hair pasta, broken into pieces 1 tsp salt 1/2 cube of butter in a medium pan, over medium-high heat, melt the butter and add the angel hair pasta. sautee it to a golden color. (the butter should get really "foamy"). meanwhile, either in a small pan on the stove, or in a glass container in the microwave, heat the chicken broth and salt. add the rice to the butter and angel hair, and stir it to coat the rice with butter. add the chicken broth and salt, and bring to a boil. reduce heat to low and simmer, covered, for 20 minutes. you can serve it as-is, or you can add about a half tbsp more of butter, and stir it in for a richer pilaf. either way is delicious.

Cous Cous. It looks weird but is soooo good. Even kids like it. DH says it tastes a little like top ramen. It's good for u too.
Wow-it's hard to think of things without any veggies. Not even potatoes? U could do different types of homemade bread in a bread macine (they have mixes in boxes so u can just dump the stuff in. There's always fried or sticky rice.... |

potoatoes, arent a veggie, lol... does he hate starches too, like corn and peas and potatoes?? that would make life hard, try making like sesame noodles or other pasta sides, HTH

eesh your man sounds way too picky! my DH will turn up his nose at things once in a great while, but i just tell him he can eat what i cook or he can go to the chow hall. it gets him to try new things. he's broadening his horizons. lol. i even had him eating lasagna here recently. (he HATES lasagna)
no veggies is really not too healthy. i'd still cook them and see if i could get him to maybe try them once in a while. my brother swore up and down that he HATED green bean casserole, but when he got married, his wife made it and he was forced to actually try it. he found out that he actually liked it. now he raves about it and wonders what else he's been missing out of fear. if you really can't get him to budge, try sneaking them into things. i have an awesome lemon muffin recipe... and i know there are tons of recipes for zucchini bread, which is really good and with most of the recipes for it, you can't tell at all that there is zucchini in it, because you can't see it. it makes very moist bread. you might be surprised, and so might he!good luck!

hash brown casserole is soooo good and always makes a good side dish, and even though he may not like vegetables creamed spinach is always delicous, my husband loves it and he doesnt care for vegetables, also he love sweet potatoe casserole, but it has to be very sweet for him.

Hell, I'd just make what I want and he'd have to deal. There are very few things my husband won't eat anymore. Like, he won't eat Tuna Noodle Casserole... which let's face, big whoop if I don't make it while he's home!
He also won't eat pears. I think if you want to find something that he'll eat, then go to RECIPES <<< click this , and see if you can find something in there. HTH
