    Question for those that can?

Yesterday we canned spaghetti sauce. The flavor is amazing but I couldn't get it as thick as store bought. If you can your own or even make your own what in the world is the trick to thick smooth sauce?

I usually make chunky. Whole crushed and paste added in plus whole veggies. That way it's thick.

What kind of tomatoes did you use?

Roma and San Marzano type tomatoes make a thicker sauce.
And also let it cook longer.

I make my own sauce...I use crushed tomatoes and one can of paste. It comes out thick enough. Not sure as thick as you're looking for, but you could try another can of tomato paste maybe?

I was about to say that Always use ripe Roma tomatoes and let the sauce simmer for longer!

Do you seed the tomatoes and remove its excess water?

I honestly don't know I just bought a box of "canning" tomatoes from a local farm. I'll use Roma next time. Thank you

We did but I think we could have let it cook a little longer. This was my first time doing it without my grandmother or mother here for help. The flavor was just like theirs just the thickness wasn't right.

The Roma tomatoes help because they've got a lot of flesh And cooking it longer always helps.

I make my sauce with parmesan cheese, lemon, flour(just a pinch) and a sprinkle of brown sugar. it helps thicken it right up.
