It depends on what you are cooking.
For mild flavored veggies I use extra virgin olive oil with a bit of unsalted butter. For Chicken, peanut oil Everything else vegetable/canola oil Don't use olive oil under high heat by itself, it has a low smoke point and it will burn. |

generally, with sauteeing you should use a fat that has a high smoke point (as mentioned by the poster above me). sauteeing is using high heat to cook the food fast. if you want the flavor of butter, you can always add some right before the food is done cooking and you wont have to worry about it burning
