I've not tried it yet, but my grandparents and great aunts used to do it, the one that's still living now shows her daughter how to do it... it's really neat, and fun. I love all that self reliance stuff, and I hope one day to be in a position where I can do more of it. I LOVE this magazine. http://www.backwoodshome.com/articles/clay53.html

If you search "canning" on their website, you will find more, and a bunch of other cool things as well.

    Mmmmm!

Homemade, canned pumpkin butter is so good. Especially this time of year. It also makes good Christmas presents.

    I do it

If you are planning on canning low acid foods, it's a good idea to invest in a pressure cooker.

This site is great to help you get started http://www.freshpreserving.com/

For canning high acid foods like tomatoes and most fruits, you'll need these http://www.freshpreserving.com/produ...php?page_id=20

Also buy Ball's blue book guide to preserving, buy the latest version. Whatever you do, don't double your recipes or they wont turn out right.

this is the machine we used as a kid to turn the cooked apples or tomatoes into sauce

    http://www.qualitymatters.com/Produc...01&click=21247

you put the cooked stuff in the top, turn the crank, & it separates the sauce from the skins & seeds.

for help with how to's on canning, try googling "extension home canning" for information from various state's extension offices. you can also visit your county's extension office. they have tons of free info on all kinds of things...from home economics type things to gardening to agriculture.

here's a good example of extension information with a wealth of knowledge for you...http://www.extension.umn.edu/distrib...on/DJ0516.html

it is VERY important to follow the rules when home canning, since if you do something wrong, very bad microbes can start growing in your canned goods.
