Taco Casserole

another crock pot recipe. When Dh and I were both working 30 miles from home, one of us would throw stuff in the crock pot and 10 hrs later no one had to worry about cooking. I still enjoy being able to throw it all in and forget it!


ingredients:
1 1/2 lbs lean ground beef
1 can diced tomatoes with green chilies
1 can condensed cream of onion soup
1 packet taco seasoning
1/2 cup water
6 corn tortillas cut into strips
1 cup shredded cheddar cheese
2 medium green onions slice
1/2 cup sour cream

Cook beef ina skillet until brown. Drain off excess fat.
Mix beef tomatoes, soup, taco mix, and water in crock pot. Gently stir in tortilla strips. Cover and cook on low for 7-8 hrs.

Sprinkle cheese over casserole let stand for 5 minites then sprinke green onions and serve with sourcream.

I used to work in excess of 60 hrs a wk, so did my dh. I had to plan in advance, and did TONS of crock pot cooking. If you need more, let me know!

whats sad is, i just got a crock pot a few weeks ago. i had one probably 5 yrs ago and barely used it. then last week one of my neighbors was going through things and realized they had 2 crock pots and gave me one.
but your defintly making me glad i have another one now and i guess i just didnt know all the uses that come from crock pots! seriously. thanks!
