    Vegan/Vegetarian Crock Pot Recipes?

    Since having Emmett, I've had to rely HEAVILY on my crock pot to make sure we actually had dinner for the night. I've been doing lots of chickpea curries, chili's, and pasta dishes but I'm starting to peter out on ideas. We eat mostly vegan, occasionally I'll add eggs to fried rice or some cheese into something but, for the most part, we're vegan so I either need recipes that are vegan/veggie or can be adapted for that (subbing the meat for tofu or another protein source).

    Ideas, please? As much as I love my chick pea curry (and Wyatt devours it), I can't live on it every day - and that's basically what we've been doing since I made about 15 servings worth the last time I made it. Bonus points for anything that freezes well since I always freeze enough for two dinners for Wyatt and myself with DH's mission coming up.

    You are more than welcome! We don't always eat veggie or vegan but we have cut down a lot on eating meats. We are down to only a few times a week versus at all dinners & some breakfast & lunch. I feel much better health-wise when I don't eat a ton of meat/poultry.

    DH still likes meat and living here, when we're out to eat, there's either no options or the obligatory pasta with frozen veggies vegetarian meal option so I 'cheat' and eat seafood while out but at home at least, we're plant-based. I've felt so much better since going back to this and having my mom here who's full-on strict vegan was super helpful since she showed me lots of new things
