    Help Your favorite healthy recipe

    So I am starting a kickboxing class that runs 5-6:30 two nights a week and that means I need some one dish crockpot meals. I am trying to keep it healthy but DH is a meat & potatoes guy so . . .

    We have enough to do leftovers on Wednesday but I am at a loss for Friday.

    So what are your favorite meals?

    My favorite thing to make in the crock pot is turkey chili.

    1 lb of ground turkey
    1 onion
    1-2 green and/or red peppers
    1 can black beans
    1 can diced tomatoes
    1 packet of chili mix

    Of course, I brown the turkey beforehand. This makes a really good, flavorful and chunky chili!

    I am always a fan of beef stew in the crock pot. You could fill it with vegetables, and take more vegetables for yourself while your DH takes more meat.

    Home made hamburger helper....

    using ground turkey, whole grain elbow noodles and velveeta cheese ... (seasoned with salt & pepper) ^_^

    It's not a crockpot recipe, but it is easy to prepare. Black bean quesadillas.

    1 can of black beans
    Your choice of shredded cheese
    1 jar of salsa
    Tortillas

    Heat the beans and mash them until they're your desired consistancy. Put them in a bowl and mix them with the salsa and cheese. You can store this in the fridge until you're ready to make them. When ready, spread some of the mix on the tortilla, put in a pan that's been sprayed with pam or lightly greased. Top with another tortilla, cook until golden brown on both sides. Slice it up and enjoy.
