    Crockpot Teriyaki Chicken

    CROCK POT TERIYAKI CHICKEN

    12 boneless skinless chicken thighs (I used 2 boneless skinless chicken breasts instead--just put them in frozen like I always do when crockpot-ing chicken)
    3/4 cup sugar (I used 1/2 white, 1/4 brown)
    3/4 cup soy sauce (I used "lite" to cut out some sodium)
    6 tablespoons cider vinegar
    3/4 teaspoon ground ginger
    3/4 teaspoon minced garlic
    1/4 teaspoon pepper
    4 1/2 teaspoons cornstarch
    4 1/2 teaspoons cold water
    Hot cooked rice

    Place chicken in a 4 qt. slow cooker (I used the 6 qt that I have, no problem). In a large bowl, combine the sugar, soy sauce, cider vinegar, ginger, garlic and pepper. Pour over chicken. Cover and cook on low for 4 hours or until chicken is tender. Remove chicken to a serving platter; keep warm. Skim fat from cooking liquid. Place liquid in a saucepan and bring to a boil. Combine cornstarch and water until smooth. Gradually stir into liquid and stir until sauce is thickend. Serve with chicken and rice.

    After the chicken was cooked, I removed it from the crockpot and cut it into chunks (more like it fell apart into convenient chunks).

    I mixed the chicken pieces back in with the sauce in the pan at the end, to thoroughly coat it. Served over rice with a side of stir fry veggie combo.

    This was incredibly tasty!! DH and I both agreed that reducing the sugar next time would be the only thing to change. Even with the full amount, I still licked the sauce remnants from the pan with a spoon.

    It was definitely awesome, even if it was a little sweet! There was plenty of sauce to coat the chicken and for the rice to soak up.

    I already had some cooked chicken so I just made the sauce in a sauce pan and its is so yummy though i think i may have over spiced it, it came out kinda spicy but still yummy
