    Breakfast Toast Cups

    I've made this for DH twice and thought I would share because it's easy and yummy. I think it could be good for kids too.

    Here's how they turned out!


    Breakfast Toast Cups (makes 6)

    6 slices bread
    6 strips bacon
    6 eggs
    1/2 cup mozzarella cheese
    salt & pepper

    Preheat oven to 400 degrees. Grease muffin tin.

    Trim 3-inch circles of bread, insert in muffin tins, and set aside.

    Cook bacon on medium-high heat for 3 minutes. Shape into tins. Fill each tin with 1 Tbsp cheese. Bake for 5 minutes, then remove.

    Crack eggs and separate most of the whites. Drop yolk into each cup. Add salt and pepper to taste. Bake 8-10 minutes. Pop cups out of tin with a spoon and serve immediately.


    You'll have some leftover stuff, I save the bread trimmings for either homemade croutons, or to make bread crumbs for casserole toppings. With the egg whites I made an egg white omelet for myself.

    That looks yummy! I only use my oven from October to March though so I'll have to wait
