Very healthy muffins: Morning Glory
These are very good! My 3 yr old has been wanting one non-stop since I made them today.
Mine have carrots, raisens, apples, and crushed pineapple. You can put walnuts, shaved coconut, etc in there. Servings: 24 2 cups wheat flour 1 1/4 cups white sugar 2 tsp baking soda 2 tsp ground cinnamon 1/4 tsp salt 2 cups shredded carrots 1/2 cup raisins 1 apple- peeled, cored and shredded 1 cup of crushed pineapple (I used canned) 3 eggs 1/4 cup veg. oil 3/4 cup unsweetened applesauce 2 tsps vanilla extract 1. Preheat oven to 350 degrees. Grease 2 trays of 12 muffin cups or line w/ paper cupcake liners. 2. In large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple (and pineapple, if you use that). 3. In a separate bowl, beat together eggs, oil, applesauce, and vanilla. Stir in egg mixture into carrot/flour mixture, just until moistened. Scoop batter into the muffin cups. 4. Bake in preheated oven for 20 min (my 12 muffins needed 25 min each). |

i was just thinking about these the other day! i used to have them all the time when i was younger
off to the grocery store!
