I actually boil my potatos 1st then put some oil in a frying pan and peel and cut my boiled potatos .

I then throw them in the pan which should be heated along with some chopped onion butter salt and pepper until they are crisp and brown. YUMMM

I peel them, cut them into fairly large pieces, and then I line them on a microwave safe plate. Spray them with pam, place a paper towel over them, and nuke them for about 3-4 minutes, depending on how many I'm making. (unless I'm making mashed potatoes, I don't boil potatoes at ALL)

Heat a large pan with vegetable oil and one tablespoon of butter. Put the cooked potatoes in and cook them over medium high heat for about ... oh, 5 minutes or so. And then, using the back of a spatula or wooden spoon, I gently "smush" about 3/4 of the potatoes. This gives them texture, and will make it crisp up. I then season them with salt, paprika, and pepper, (or you can use a really good seasoning salt) cook them for another 10 minutes. I don't turn or stir them too much, because I want them to get a nice golden brown.

    Serve.

Edit: If I'm making them for myself, I add in onions and peppers, which the fam doesn't like.

It depends if I want to make them with cooked or uncooked potatoes. I cut uncooked potatoes smaller. If they're cooked potatoes, like a baked potato, I cut them into larger pieces

I use butter and oil as well, not too much though. Sometimes I put onions, depends on how I'm feeling that day
