These are really easy and you can really substitute anything you like and make it your own, and what your family likes, what I also love about these is that you can multitask while thay cook, and since they are portion sized, you can't be teneped to over east and the leftovers store nicely for the next days grab and go breakfats

2 eggs (or 1/2 cup eggbeaters)
1/4th cup milk
handfull of chopped ham
fresh chopped spinach
hand full of southwestern corn mix (I use cw brand which has bell peppers, blackbeans and corn)
half handfull of shredded cheese
cracked black pepper


Heat oven to 400 degrees F. stir all together in bowl. Spray Muffin pan with nonstick cooking spray. Using a 1/4 measuring cup, ladel muffin cups half 2/3 full. Place in oven. let bake for 10 mins and check. The eggs are done when the tops are golden and not jiggly. use spatula or bamboo scewwer ti loosen from pan onto cutting board and let cool. serve warm with salsa.

Makes about 8. serving size (for me) 2 pieces
