    Breakfast Casseroles

    Ladies,
    These are the casseroles I sold at my store in Va Bch call Smart Made Meals, Inc.
    They are quick, easy, can be made then frozen. You just need to thaw them overnight in the refrig and then cook as instructed.

    Sausage Breakfast

    12 oz cooked crumbled breakfast sausage
    1/2 cup chopped onions
    1 cup liquid egg (or substitute 3 eggs beaten)
    2 cups fat free milk
    1 1/2 tsp ground mustard
    1/2 tsp salt
    1/4 tsp pepper
    3 cups packed bread cubes
    2 cups shredded cheddar cheese

    1. Spray a 9X13 pan.
    2. In a microwave safe dish cook onions for approx 1 minute
    3. In a large bowl whisk egg, milk, mustard, salt & pepper
    4. Stir in sausage, onions, bread cubes and cheese.
    5. Pour into greased pan.
    6. Either Cover with tin foil and freeze OR bake in preheated 350 degree oven for 35-40 minutes or until a knife comes out clean when inserted into the center. Let stand 5 minutes before cutting.
    Feeds 6

    Bacon Egg & Cheese Bake

    10 oz cooked bacon (I use Hormel in the glass jar NOT BACOS!)
    1 can crescent rolls
    4 eggs
    3/4 cup milk
    1/4 tsp salt
    1/4 tsp peper
    2 cups shredded cheese (swiss or cheddar)

    1. Spray a 9 X 13 pan
    2. Unroll crescent rools and line bottom of pan
    3. Whisk eggs in a bowl
    4. Add milk, salt & pepper
    5. Pour egg mixture over cresent rolls
    6. Sprinkle with cheese, top with bacon
    7. Either cover with tin foil and Freeze OR back in preheated 350 degree oven for 1 hour or until mixture is set.

    Cinnamon Sticky French Toast


    1. Spray a 9 X 13 pan
    2. In a microwave safe dish add; 1 cup packed brown sugar, 2 tblsp butter, 2 tbsp corn syrup. Heat for 1 minute. Stir.
    3. Pour sugar mixture into pan, spread evenly. Sprinkle with 1/8 cup chopped pecans.
    4. Arrange 6 slices of bread on top of sugar mixture. Top with another 1/8 cup of pecans.
    5. Top each slice of bread with another piece of bread
    6. Whisk 6 eggs, dash of salt, 1/2 cup of mile and 1/2 tsp vanilla in a bowl.
    7. evenly pour over bread the egg mixturel.
    8. Sprinkle with 2 tbsp cinnamon sugar (mix 3 tsp sugar w/1 tsp cinnamon)
    9. Either cover pan with tin foil and freeze OR bake covered for 30 minutes in a preheated 375 oven then uncover for 10 and continue baking. Let stand for 10 minutes before serving. Dust with powdered sugar and serve with bacon and fresh fruit. YUM!! Serves 6

    English Muffin and Ham Strata

    6 cups diced english muffins
    2 cups diced ham
    2 cups shredded taco blend cheese
    1 1/2 cup skim milk
    1 1/2 cup liquid egg (or use 6 eggs whisked together)
    1/4 cup dijon mustard
    1/2 tsp pepper
    1/4 tsp salt

    1. Spray a 9 X 13 pan.
    2. Place 3 cups of diced muffins. Top with half of the ham. Sprink half of the cheese over top. Repeat layers until you've used all the ham & cheese.
    3. In a large bowl whisk milk, eggs, mustard, salt & pepper. Pour over top of muffin mixture. Use a large spatula, gently press down on the top so all the ingredients are moistened.
    4. Cover with tin foil and freeze OR bake in a preheated 350 degree oven uncovered for 45-60 minutes or until cheese is melted. Let stand 10 minutes. Cut into servings.

    These are simple and awsome breakfast casseroles and really cut down the stress of trying to feed a large group.
