breakfast cacasseroles?

i want to make one for christmas mornin but i am completely in the dark with them. what are your tried and true breakfast casseroles?

I scrambled a dozen eggs, cook some maple sausage, mix them together, throw it in a casserole dish with cheese on top and put it in the oven until the cheese melts.

16 slices white bread (crusts removed)
8 slices ham
8 slices old english cheese (cheddar can be used if you cant find this)
6 eggs, beaten
3 cups milk
1 tsp salt
1/2 tsp dry mustard
1 1/2 cups cornflakes (crushed)
1 stick margarine/butter (melted)

In a 9x13 inch baking dish layer bread, ham, cheese, bread. Mix eggs, milk, salt + dry mustard. Pour over the layers.

*LET STAND OVERNIGHT* in the fridge

Put cornflakes on top. Pour margarine/butter over everything. Bake at 350 for 1 hour.

just a disclaimer, since this is a "souffle" it doesn't travel well so it's best made at home.

a friend gave me this one and makes it all the time, i just posted it on zaar

DH loves it made with broccoli florets, eggs, sausage, shredded cheddar cheese and bisquits on top. I cook the broccoli, eggs, and sausage like the package says and then I make a layer of each with cheddar cheese sprinkled in between. I mix them all up and then I bake the bisquits and when they are almost done I take them out and lay them on top the casserole and bake until the biscuits are all the way done and the cheese melted.
