    Cornbread can be good??? What???

    Advertisements
Thats right. After spending most of my childhood in the south, I just tasted GOOD cornbread for the first time in my life. They served it in a cast iron skillet, and it was sweet and moist, not dry and bland like I am used to. Anyone have a recipe for cornbread like this? I do have a cast iron skillet that I NEVER use, so this would be perfect.

Yep, it's called Jiffy mix. You mix it like it says on the package, but you add in half a can of corn or creamed corn. SO GOOD!!!

DH: Thank you. ME: For what, babe? DH: For being you.

I am eating the piece that was in my to go box right now and seriously I think I might be drooling. When I was a kid my mom always made cornbread but it was completely tasteless and quite dry. I hated it. By the time we went to dinner last night I was so hungry I was like "I will eat anything to make my stomach stop making that obnoxious noise." Now I am hooked.

Dude. How did you grow up in the south and never have good cornbread? LOL

I really like Trader Joe's cornbread mix. I find it to be much more moist than Jiffy (Jiffy's is yummy but usually turns out dry for me)... and some restaurants have TDF cornbread (mmmm Souplantation LOL).

I think my family just totally ruined it for me. They all amde it the exact same way. After a while of everyone but me eating it I guess I decided I just didn't like it. I could cook all day, and every time I see a piece of cornbread I think in my head "There has GOT to be a way to take this really good idea of cornbread and make it taste good..."
