featherlite banana bread.
1 stick butter
1 cup sugar 2 eggs 1 cup ripe, mashed bananas 1 cup walnuts, chopped 1/4 cup sour cream 2 cups flour 1 1/2 tsp. baking powder 1 tsp salt 1/2 tsp soda Cream together butter and sugar. Beat in eggs; then bananas and sour cream. Add all dry ingredients except nuts, stirring ONLY enough to barely combine (too much stirring will make it coarse.) Fold in nuts and pour into buttered (not oiled) 9x5 bread pan. Bake at 350 for about an hour. Test for doneness as for cake with broom straw. Cool in pan for at least 10 minutes before turning out; then remove from pan and cool on rack. Do not attempt to cut before it's cool all the way through, as it will crumble. Makes 1 loaf. Note: In the mountains, cook about 1 hr. and 15 min.

i don't know if it's "light" or anything. my great aunt named it so that's the name that's stuck with it, ha!
