How do you get them prefectly round?

Well after the initial proofing I cut them to size and roll it into a ball and push my thums into the middle to make the holes. Then I roll it slightly between my thumbs and fingers to widen the whole... then I let it sit for a bit to proof to let it get into a perfect shape. Hope that helps you out.
