    I should be way fast asleep. But instead, I am in the kitchen making Almond Roca!!! If I could, I would totes share it with you guys. Instead, I'll give it to my coworkers in the morning.

    First, get out all ingredients and utensils. This will take about an hour to make.

    Large frying pan, wooden spatula, rubber spatula, candy thermometer, 11x16 baking pan with edges, microwaveable dish for melting chocolate chips such as glass/Corning Ware, sharp knife for scoring, 2 cup measure, paper towels.

    Ingredients:

    2 cups real butter (1 lb.)

    2 cups sugar

    1 cups chocolate chips (12 oz. = 1 3/4 cups)

    1/2 cup crushed almonds

    Put butter in fry pan on medium heat to start if butter is frozen to melt, then turn down to just above low. Add sugar and stir continually until mixture is a golden brown then test with candy thermometer. Cook until it reaches soft crack (135 C or 275 F) (VERY IMPORTANT). Remove from heat and pour onto cooling pan. Cool for 5 min. then score into pieces ( 9x7 rows) and dab off any excess oil with a paper towel. Meanwhile, melt chips in microwave for 1 min. then stir. Microwave again for 40 sec. Stir again. Spread on candy with rubber spatula. Dust top with almonds. Cool in Freezer to hurry it up. When hard break into pieces (makes about 63- 1 x 1 x 1/4" thick). ENJOY!
