    G got home late, so we're gonna do dinner after I get Cam to bed... it will be nice to have some couple time.

    I'm a big dork, I loved studying if it was something interesting...

    Sure Dawna.. I'll put it here.. It's actually a recipe that Ellen posted a while back

    1 1/2 lbs chicken, cooked and cubed (I usually use thighs, but tonight I used boneless skinless breasts)

    1 8 oz. pkg cream cheese, softened
    1 can fire roasted diced green chilies... I like the Ortega ones..
    Tortillas (I use the burrito sized flour ones and this recipe makes 4-6 enchiladas that size)
    1 can green enchilada sauce .. I buy the Old El Paso brand
    Mexican blend shredded cheese

    Preheat oven to 350. In a large skillet combine cooked chicken, green chilies, cream cheese and about 1 tsp of black pepper and stir until cheese is evenly distributed throughout. Place mixture into tortillas and roll up. Place in a 9x13 in baking pan that's been sprayed with non stick spray. Top rolled enchiladas with enchilada sauce, and then with enough cheese to cover.. Bake for about 30 mins or until cheese is melty and the sauce is bubbly..

    It was nice.. G's realizing he hasn't been the most attentive person lately.. Sometimes I have to remind him that after all these years, I still like spending time with him..
